Cheese Popovers

Servings: 12 popovers 1½ cups flour ½ teaspoon salt 3 eggs 1 cup half and half ½ cup whole milk 2 tablespoons melted butter 1 cup cascaval or grated gruyere cheese

Position a rack in the center of the oven and preheat oven to 300º.

Combine the dry ingredients in a bowl and make a well. Beat the eggs, add the milk and half-and-half, and butter in a spearate bowl. Pour the wet ingredients into the dry ingredients and mix to combine.

Grease a tray of muffins. Pour the batter in the tins. Spinkle the tops with cheese.

Bake for 30 - 40 minutes.
